Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent the cookies from sticking.
In a large mixing bowl, mix together the creamy peanut butter, granulated sugar, packed brown sugar, egg, vanilla extract, baking soda, and salt. Stir until the mixture is smooth and completely blended without any lumps.
Utilizing a cookie scoop or tablespoon, generously scoop out portions of dough and roll them into 1-inch balls with your hands.
Pour the ½ cup of granulated sugar into a shallow bowl and roll each dough ball in the sugar to coat evenly.
Place the coated dough balls onto the prepared baking sheet, ensuring there’s approximately 2 inches of space between each ball for even baking.
Bake in your preheated oven for about 10-12 minutes, or until the edges of the cookies are lightly golden.
Once removed from the oven, immediately press a chocolate kiss firmly into the center of each cookie while they’re still warm.
Place the cookies back in the oven for an extra 2 minutes to allow the chocolate kisses to soften.
After the additional two minutes, remove the baking sheet and let the cookies cool on the baking sheet for about 5 minutes before carefully transferring them to a wire rack to cool completely.
