Instructions
Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a spacious mixing bowl, combine the rolled oats, chopped pecans, sliced almonds, pumpkin seeds, shredded coconut, salt, and ground cinnamon. Stir thoroughly.
In a small bowl, whisk together the pure maple syrup, melted coconut oil, and pure vanilla extract until smooth.
Pour the wet mixture over the dry ingredients and mix until all dry ingredients are evenly coated.
Transfer the granola mixture onto the prepared baking sheet, spreading it out evenly. Press down for a chunkier texture.
Bake for 25-30 minutes, stirring halfway through until golden brown.
Remove from the oven and allow to cool completely on the baking sheet.
If desired, add the dried cranberries and gently toss until evenly distributed.
Transfer to an airtight container and store at room temperature for up to two weeks.
Notes
Serve in a clear glass jar or bowl and pair with yogurt or milk.
