Instructions
Begin by setting your Instant Pot to the 'Sauté' function. Once it’s hot, add the olive oil. When the oil warms up, add the diced chicken pieces in an even layer. Sauté the chicken, stirring occasionally, until it is beautifully browned on all sides, approximately 5 to 7 minutes.
Add the minced garlic and Italian seasoning to the pot, stirring continuously for about 1 minute, until the garlic becomes fragrant.
Carefully pour in the chicken broth and use a wooden spoon to stir, ensuring to scrape up any delicious browned bits stuck to the bottom of the pot. This will enhance the flavor of your dish.
Gently place the fettuccine pasta into the pot, ensuring that it is fully submerged in the broth. Do not stir the pasta; simply let it sit on top. Secure the lid on the Instant Pot, ensuring that the steam release valve is in the 'Sealing' position.
Press the 'Manual' or 'Pressure Cook' button and set the timer for 8 minutes.
Once the cooking time concludes, allow for a natural pressure release for 5 minutes to let the flavors meld, then carefully switch the valve to 'Venting' to release any remaining steam.
Once the pressure is fully released and the lid is safe to open, remove the lid and stir in the heavy cream, freshly grated Parmesan cheese, salt, and pepper. Mix until everything is well incorporated and the sauce achieves a creamy consistency.
If the Alfredo sauce appears too thick for your liking, gradually add additional chicken broth until the desired texture is reached.
