Instructions
Preheat the Oven: Begin by preheating your oven to 350°F (175°C). While that's happening, prepare two baking sheets by lining them with parchment paper to prevent sticking.
Prepare the Cookie Dough: In a large mixing bowl, cream together the softened butter, packed brown sugar, and granulated sugar. Use an electric mixer on medium speed until the mixture is light and fluffy, approximately 2-3 minutes.
Incorporate Eggs and Vanilla: Add in the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract, ensuring everything is well blended.
Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually pour the dry mixture into the wet ingredients, mixing on low speed until just combined to avoid overmixing.
Add Chocolate Chips: Carefully fold in the mini chocolate chips using a spatula, ensuring they are evenly distributed throughout the cookie dough.
Shape the Cookies: Using a cookie scoop or a tablespoon, drop rounded balls of dough onto the prepared baking sheets, making sure to space them about 2 inches apart to allow for spreading during baking.
Bake the Cookies: Place the baking sheets in the preheated oven and bake for 10-12 minutes. The edges should turn lightly golden while the centers remain soft and slightly underbaked.
Cool the Cookies: After baking, allow the cookies to rest on the baking sheets for about 5 minutes. Then, transfer them to a wire rack to cool completely before assembling the sandwiches.
Assemble the Ice Cream Sandwiches: Once the cookies are cooled, take one cookie and scoop a generous amount of ice cream onto its flat side. Place another cookie on top, flat side down, and press gently to form a sandwich. Repeat this process with the remaining cookies and ice cream.
Optional Flavor Boost: For an extra burst of flavor, sprinkle a pinch of flaky sea salt on top of the ice cream layer before capping it with the second cookie.
Freeze: Place the assembled ice cream sandwiches in the freezer for at least 30 minutes. This helps the ice cream firm up, making them easier to handle and eat.
