In a large mixing bowl, combine the ground chicken, panko breadcrumbs, finely chopped green onions, garlic powder, ginger powder, salt, black pepper, and red pepper flakes if using. Mix gently with your hands or a spatula just until everything is evenly combined. Be careful not to overmix the chicken to keep the sliders tender.
Preheat your grill or a non-stick skillet over medium heat. While it heats up, form the chicken mixture into small patties that are about the same size as your slider buns (approximately 2 inches wide and 1/2 inch thick).
Once your grill or skillet is hot, place the patties on and cook them for approximately 4-5 minutes on each side. They should be cooked through (internal temperature should reach 165°F) and have a beautiful golden-brown exterior.
In a separate small bowl, whisk together the mayonnaise, sweet chili sauce, and Sriracha to create a deliciously spicy Bang Bang sauce. Taste and adjust the heat by adding more Sriracha if desired.
To assemble your sliders, take the bottom half of each slider bun and place a chicken patty on it. Generously drizzle the Bang Bang sauce over the patty, then top it off with a crisp lettuce leaf and a few pickle slices. Cap it with the top half of the bun.
